I’ve been making truffles for a few years now, experimenting with different truffle recipes and styles. I love the uniform appearance of molded truffles, and I saw this as the perfect way to continue to make dipped truffles while achieving a consistent appearance. I’ve had to modify a few recipes (I had a disaster experience with a butter ganache recipe that stuck to the mold), but since moving to a more basic ganache with a high chocolate ratio, I’ve seen fantastic results. Well worth the high price. Now I just need to make bigger batches so I can fill the entire sheet!
Highly recommended for beginner and advanced truffle makers. Saves a lot of time that would ordinarily be spent rolling truffles. It’s easy to use, easy to clean, and durable.
